Turning an invasive species into a sustainable delicacy

A local company’s innovative approach has sparked a new market for sea snails while promoting sustainability in the Black Sea region.

Sever Export, a family-run business in Varna (Bulgaria) recognised the culinary and commercial potential of the invasive Rapana venosa sea snail, initially viewed as a nuisance. By developing innovative processing techniques and recipes, the company turned the snail into a local delicacy and niche export product. With EU funding, the company enhanced its processing capacity, established a new plant, and introduced onboard shock-freezing technology. This allowed for high-quality products and local sales outlets, boosting local economies. The company’s environmentally friendly practices also helped mitigate the impact of the invasive species, contributing to ecosystem recovery and sustainability.

Results

  • To date, Sever Export has processed over 750 tonnes of seafood.
  • Established local sales outlets for sea snails, engaging both professional and amateur fishers. 
  • Harvesting this species helps mitigate its negative effects on native black mussel populations, allowing the local ecosystem to recover.
